Snack on These Baked Banana (or Plantain) Chips

Bananas have been a delicacy across Africa since time immemorial, and are a great source of resistant starch. For this recipe, the banana variants used can either be unripe (green) bananas or plantains.

Although relatively easy to make, it might still require a few tries to achieve perfection. It's all worth it in the end though.

INGREDIENTS

  • 4 unripe bananas or plantains, peeled
  • 1 cup freshly-squeezed lemon juice
  • Sunflower or virgin olive oil
  • 2 tbsp. natural honey (optional)

DIRECTIONS

  1. Preheat oven to 200° F (approx. 93° C). If you don't own an oven, a microwave could also get the job done.
  2. Spread a thin coat of sunflower or olive oil on a baking sheet, and place the sheet on a baking tray.
  3. Cut the bananas or plantains into 1/4 inch slices (approx. 6 mm). You can use a chopping, cutting, or slicing tool to get perfect slices. If you don't have one, a knife will do; just make sure the slices are not too thick.
  4. Dip the banana slices in the lemon juice, the place them on the baking sheet. The juice prevents the slices from discolouring.
  5. Bake the slices for 2 - 3 hours, turning them over only once, until they turn golden brown and have no visible moisture.
  6. Take the slices out of the oven and leave them to cool, and they should start to crisp after about 5 minutes. If they do not start to crisp, bake them for another 15 - 20 minutes.
  7. Optional: Once the chips are out of the oven, you can drizzle some natural honey on them to taste.

You're done! You can now enjoy your healthy snack without feeling any unnecessary guilt.
